Second Chance Chicken


  • 1-2 pre-cooked free-range chicken breasts cut into 1” cubes
  • 1 small onion – diced (pre-dice the night before while making dinner to make this faster in the morning)
  • 1 crown of broccoli – chop the florets into small piece (pre-chop…)
  • ¼ t Thyme
  • ¼ t Rosemary
  • Sea Salt and pepper to taste
  • 1 T Virgin Olive Oil or Coconut Oil

Cooking Steps:

  • Heat oil in pan to medium
  • Add onion and broccoli and cook for 4-5 mins
  • Add thyme, rosemary and salt and pepper to taste
  • Add pre-cooked chicken cubes, cover and check to see if warm in 3-4 mins

A hot healthy breakfast in around 12 mins!  Feel free to add a pat of butter to your bowl and Enjoy!
